PROCESS
Ripe cherries undergo 24h pre-fermentation, 24h in-cherry fermentation, then 5 days of anaerobic fermentation with selected yeast and natural strawberry flavours. After 10 days of mechanical drying, the coffee is EA Sugarcane Decaffeinated using naturally derived ethyl acetate from Colombian sugarcane, preserving sweetness and fruit character.
