HISTORY

This exceptional EA Decaf comes from Finca Los Nogales, produced by Angie Hernandez, the youngest of the Hernandez family. Leading the farm’s laboratory, Angie specialises in microbiology and fermentation, continuing her family’s legacy through innovation.

PROCESS & ACCOLADES

Ripe cherries are selected, density sorted and depulped, followed by 90 hours of pre-fermentation in mossto. The coffee is then farm-decaffeinated using EA, a natural solvent derived from fermented coffee cherry skins, before 8 days of controlled drying.

Championship Prestige: An EA Decaf from Los Nogales helped Weihong Zhang win the 2024 US Brewers Cup Championship.

Frequently Asked Questions (FAQ)

Q1: What makes Los Nogales EA Decaf world-class?

It combines 90 hours of mossto fermentation with natural farm-level EA decaffeination from coffee cherry skins, creating an unprecedented competition-grade flavor profile (bubble gum, banana, candy) that won the 2024 US Brewers Cup.

Q2: What is the recommended brewing method?

Pour-over methods such as Origami, V60, or Kalita Wave with 92°C water yield astonishing sweetness and complex fruit aromas.

Q3: How fresh is the roast upon delivery?

All beans are small-batch roasted weekly in Melbourne and dispatched immediately for peak aromatic freshness.

Q4: How should I store whole bean coffee?

Keep the beans sealed in their original valved bag in a cool, dark place away from direct sunlight and heat. After 1 week of degassing post-roast, storing sealed bags in the freezer is recommended to preserve peak freshness and flavor for up to 1 year.
